The Kigami Exclusive Damascus Honesuki 15 cm by Shinrai Knives is your reliable partner for deboning and precision work in the kitchen. Compact, powerful, and extremely accurate, ideal for separating meat from bones, especially in poultry like chicken. Thanks to its sturdy tip and stiff blade, you work with maximum control and precision.
A honesuki knife is a traditional Japanese deboning knife with a distinctive triangular shape and a robust, pointed tip. It is specially designed to efficiently and precisely cut along bones without damaging the meat. In addition to deboning, this knife is also surprisingly versatile: perfect for finely slicing small vegetables and fruits such as shallots, garlic, and strawberries.
Kigami Exclusive
Kigami stands for timeless Japanese mastery. Each knife in this series is handcrafted and embodies the perfect balance of strength, sharpness, and elegance. The honesuki combines the robustness required for deboning with the refinement of Damascus steel. Perfectly balanced for maximum control during both powerful and precise cutting tasks.
Unique features and specifications
- 3-layer VG-10 Damascus steel: The blade is constructed from three layers of high-quality VG-10 Damascus steel. This steel is known for its excellent sharpness, wear resistance, and durability, perfect for intensive daily use, even when working around bones.
- Tsuchime (hammered) finish: The unique hammered texture, also known as Tsuchime, not only provides a beautiful appearance but also prevents food from sticking to the blade.
- Hardness of 60–62 HRC: With an impressive hardness of 60–62 HRC, the knife maintains its razor-sharp edge for a long time and is resistant to wear, even with intensive use.
- 15° cutting angle: Ground at a sharp 15-degree angle, for exceptional precision and minimal cutting resistance. Ideal for controlled cutting movements close to bones and for fine slicing.
- High-quality wooden handle: The handle is made from a combination of the highest quality cherry wood and walnut wood. Thanks to a special finish, the wood is water-resistant and offers a comfortable, firm grip, even during prolonged use.
- Warranty: The knife comes with a 5-year warranty on material and manufacturing defects.
